Introduction and Expansion of Dairy Product Consumption in Japan

Abstract

This article sustains that the myth of milk as a necessary food for health is part of the process of western modernization. For this reason, it occupies a central place in the modernization of Japan, particularly since the second post-war years. Subsequently, Japanese governments have followed a policy of promoting milk consumption, as well as protecting local production against foreign competition. Dairy products are currently a regular part of the diet of the Japanese, but their consumption has never reached the levels of advanced western countries and, in recent decades, as in these countries, it shows a steady decline. These trends must be assessed in the context of the crisis in Japan´s primary sector.
